Aquafaba Fried Rice

A quick fried rice recipe using the liquid from a can of chickpeas (aquafaba), instead of oil or butter to create a perfectly salty and rich sauce. This recipe is very open to changes and additions such as spices or other toppings for the rice. In its written state however, this recipe is vegan.

Time: 20 minutes

 

 

Ingredients

Liquid from one can of chickpeas (aquafaba)

2 cups day-old cooked rice

3 tbsp Soy sauce

1 package firm tofu

2 cups spinach leaves

Your preferred spices to taste (salt, pepper, garlic, etc.)

Sesame seeds to garnish (optional)

 

Directions

Pour about half of the aquafaba into a frying pan and turn it on to medium heat. 

Cube the tofu and add it to the aquafaba once it is near boiling, and cook for two minutes.

Add the rice to the mixture, stirring until it is all mixed together.

Add the other half of the aquafaba, mixing more.

Add the spinach and soy sauce. 

Cook, stirring frequently, until spinach is shrunken and everything is combined.

Add your choice of spices to taste.

Plate and serve immediately, sprinkling with sesame seeds.
